There’s nothing like a spread of tortillas and fillings to get your appetite going, but the problem is usually that you end with a lot of heavy stuff which you sprinkle with lime juice to cut through the fat.
No longer! With three simple ingredients, anyone can make a salsa which slices through the umami, and gets the tongue tingling. You will need:
- A generous handful of fresh coriander (cilantro)
- Half a small onion
- Juice of one lime
Collecting the ingredients is the hardest part. Mince the onion as finely as you can, and place in a serving dish. Next chop the coriander coarsely and mix it in with the onion.
Finally, roll the lime on your chopping board squeezing down on it from above; this loosens the juice inside and makes squeezing them a doddle.
Slice that bad boy in half, squeeze it over the onion-coriander mix and get ready for a taste explosion in your tacos. Don’t forget: taste it before serving and adjust by adding more of the other ingredients to your own tastes.
Get it on the table, and feel the electric citrus mixture slam through everything else.
